First Annual HMCCC Chili Cookoff

Following the March meeting, members of the club were treated to a chili cookoff complete with corn bread and all the fixin’s. Nine members provided a variety of flavors from plain, mild style to exotic spiced chili and everything in between. Members sampled the chili’s and voted for their favorite. The winner was “Betty Crocker’s Mild Homestyle chili” prepared by Janet Stein. (See recipe below). A big thank you to all the great cooks who shared their cooking talents with the club.

Betty Crocker’s Mild Homestyle Chili
3 Lbs Lean Hamburger
2 white onions, coarsely chopped
2 cans crushed tomatoes (1 lb 12 oz size)
1 can tomato sauce (8oz)
2 cans red kidney beans (15 ½ oz) - drained, reserve liquid
2 Tbsp sugar
3 Tbsp chili powder
2 tsp salt

In a dutch oven or large roasting pan, brown hamburger and onions (until onions are tender). Drain the fat. Stir in tomatoes, tomato sauce, kidney bean liquid, sugar and seasonings. Heat to boiling. Simmer uncovered for 1 hour and 15 minutes. Stir in Kidney beans and heat for another 15 minutes. Serve with your favorites toppings. Serves 10 -12.

Old Fashioned Iron Skillet Corn Bread
1 ¼ c. all purpose flour
¾ c. Corn Meal
½ c. sugar
2 tsp baking powder
½ tsp salt (optional)
1 c. milk
¼ c. vegetable oil
1 egg, beaten

Heat oven to 400⁰. Lightly grease a 9 inch iron skillet (or 8 inch square pan). Combine all dry ingredients. Stir in milk, oil and egg just until dry ingredients are moist. Pour into pan and bake 20 – 25 minutes or until golden brown and wooden pick inserted in center comes out clean.
